Ember & Bun
Burgers sizzling on a grill at night

03 — Our Story

Born on a flat-top.

Ember & Bun started with a cart, a slab of steel and one question: how good can a burger get if you only make a few things, and make them properly?

01Philosophy

We think the best burger in the city should come from a cart — something fast, loud and obsessively made on a hot night.

01

Fire

A flat-top hot enough to brown beef in seconds. Crust is flavour, and flavour is the whole point.

02

Speed

Smashed, flipped, stacked and wrapped in minutes — without ever cutting a corner.

03

Restraint

A short menu we can make perfectly every time, instead of a long one we make fine.

Meat searing on a hot grill
Flames rising around food on a grill
A cheeseburger with lettuce on a soft bun
Onion rings with three dipping sauces

The Beef

Ground fresh, every afternoon.

A blend of chuck and brisket for richness, ground in small batches each day and rolled into loose balls — never pre-formed, never frozen.

The Smash

Pressed hard. Flipped once.

The ball hits screaming-hot steel and gets pressed flat with a heavy spatula. Maximum contact means maximum crust — those lacy, crispy edges.

The Bun

Soft enough to hug it.

Squishy potato buns, buttered and toasted on the same flat-top so they soak up the juices without falling apart.

The Sauce

Ember sauce, made daily.

Our house sauce — tangy, smoky, a little sweet — plus chipotle mayo, truffle mayo and a barbecue sauce made with Sukkari dates.

06Ball to Bun

Five steps. Ninety seconds.

There's no secret to a great smash burger — just a hot surface, good beef and a crew that never rushes the important bits.

  1. 01

    Grind

Chuck and brisket, ground fresh in small batches.

  2. 02

    Ball

Loosely rolled — never packed tight, never frozen.

  3. 03

    Smash

Pressed flat onto 230°C steel for a lacy crust.

  4. 04

    Flip

One flip, cheese on, melted under a dome.

  5. 05

    Stack

Sauce, pickles, onions, toasted bun. Wrapped and out the window.

07The Window

Fast, but never rushed.

Order at the window or skip it entirely and order online. Either way you get your name called out, a hot bag and a crew that actually says thank you.

08Late Nights

Open when you're actually hungry.

From four in the afternoon until one — three on Thursdays and Fridays. After the game, after the film, after the shift.
